As an ingredient, grilled corn is a prime example of rustic, guilt-free comfort food. Elote is a Mexican Street Style dish that elevates a simple ingredient to the next level. Grilled Elote is a simple yet versatile side dish that goes well with nearly any main ingredient, but is delicious enough to stand on its own.

Directions

Step 1

Preheat your Brisk It grill to 350°F. Ensure that the pellet hopper is fully filled with wood pellets.

Step 2

Spread butter evenly and sprinkle kosher salt on each ear of corn. Tightly wrap each corn in aluminum foil individually.

Step 3

Once the grill reaches 350°F, place the corn on the grill and smoke for 25 minutes. Turn the foil wrapped corn a few times during cooking so that all sides are roasted evenly.

Step 4

Mix together the mayonnaise, sour cream, garlic, and chili powder. Stir until evenly combined.

Step 5

After smoking for 25 minutes, remove the corn from the grill and place on a tray. Allow the foil to cool down and take the corn out of the foil.

Step 6

Slather the corn with the mixture liberally on all sides. Sprinkle the cotija cheese over the corn. Finish off with more chili powder and cilantro over top to taste.
